Pasta With Pesto Sauce

One of the best pasta recipes for the summer is Pasta with Pesto. It’s quick to make, very refreshing and the sauce does not require any cooking. All you need is a blender or a food processor and a few simple ingredients.

 INGREDIENTS:

  • Fresh basil – 2 bunches
  • 1 cup Grated Parmesan cheese (can substitute with Pecorino Romano)
  • 1-3 garlic cloves
  • 1/2 cup extra virgin olive oil
  • 1 box of pasta
  • 1/2 of medium size tomato or a 2-3 cherry tomatoes (optional)
  • Salt

Start by putting a pot of water to boil – about 3 QT of water.

Next wash the basil. The fresher is the basil, the tastier will be your pesto. Try to use the freshest, crispiest basil you can get.

Mine was actually freshly cut – every spring I plant basil and then snip the tops throughout the summer to make pesto. We really like pesto – even my 4 yr old eats it.

Before washing the basil you need to pull the leaves off the stalks.

Discard the stalks.

Leaves can be washed in a bowl with water – toss them around a few times and drain the water. I found it to be the fastest and most convenient way to do this in a salad spinner. I fill the salad spinner bowl with water ( without taking out the insert), toss the leaves around with my hand and then lift the insert out of the water. Empty the bowl. Place the basket back into the bowl and spin a few times until the excess water comes off the leaves.

Next measure the oil – half cup of extra virgin olive oil. Place olive oil, pine nuts, garlic, tomatoes and salt into the food processor or blender. Blend about a minute until smooth texture is achieved.

Add basil and cheese. Blend until Basil is chopped but not liquefied. If pesto is coming out a little too dry add some more olive oil – 1-2 table spoons. Your pesto is now done.

By now water in the pot would have boiled already so reduce the heat under your water and slowly about 2 tablespoons of of salt. Add it slowly because salt will make the water boil more vigorously. Set the timer to the time indicated on the pasta box, add pasta to the boiling water and mix well. Mix pasta again a few more times during cooking to prevent sticking.

When pasta is cooked drain on a colander and return pasta back to the pot. Add a few spoons of the pesto and mix well.

Serve the pasta on a dish, topping it with a some pesto sauce and cheese.
